    Best used on very dull or damaged knives, including blades with issues such as a missing tip. The coarse texture helps create a new bevel with ease.

    Daily maintenance

    Intended for daily maintenance and establishing an edge on a dull knife. Soak in water before use, usually until the bubbles stop.

    Polishing stage

    A smooth-textured stone intended for polishing a knife for cutting proteins. Soak for a minute or two before sharpening.

    Naniwa Lobster stones are porous traditional water stones and should be soaked in water before use.

    The 220 and 1000 grits should be soaked until the bubbles stop. The 3000 grit only needs a short soak before sharpening.
